There’s a perfectly nice tutorial on the Apple site about installing PostgreSQL on Mac OS X from source. It was very educational, but just after I had followed it I ran into PostgreSQL Tools for MacOS X on Sourceforge, which includes an installer that would probably have saved me a little bit of work, but even if you have already installed it yourself you could probably use their tools.
